Happy Hour at Ichiran
Ichiran’s Bushwick shop was the Fukuoka-born chain’s first-ever U.S. location, opening in 2016 and bringing its signature solo dining booths stateside. Each guest gets a private cubicle with a stool, a coat hook, a water tap and a torso-level blind, so you can eat in near-total privacy with no eye contact.
You order via a fill-in-the-blank customization sheet, dialing in broth richness, garlic, scallion, pork, noodle firmness and Ichiran’s proprietary red spice sauce, then hand it through the window and the blind rolls down. It’s a ritualistic, bucket-list experience built entirely around one dish: rich pork-bone tonkotsu ramen with ultra-thin noodles.
What to Expect
There’s no happy hour at Ichiran. The whole model is a focused, no-conversation ramen counter with no bar or lounge, so there’s nothing discounted; the appeal is the bowl and the booth.
